A mixture of Apples picked from our orchard, crushed into a cuve'e & fermented in seasoned puncheon oak barrels. Then re-fermented in bottle and aged on lees in our cellar for over two years before being taken out riddled and disgorged.


It's a nod to a more traditional type of cider making, taking a authentic approach with it's techniques and using them in conjunction with our own philosophies as orchardists to create a cider that challenges the perceptions and notion of what a typical Australian cider has to be.


Made in a refreshingly crisp but dry naturally sparkling cider style.
