Handpicked fruit sorted and processed with some batches whole bunch pressed, and some batches gently crushed, then pressed.

Only free run juice was used for barrel fermentation in new and seasoned French oak puncheons for ten months.

Full malolactic fermentation, with regular stirring of yeast lees to create a complex creamy texture to the wine.
